A huge congratulations to | Llongyfarchiadau mawr i Jack Airey (pictured right) for winning with his dishes at the Grwp Llandrillo Inter-College & Seafood Week Chef of the Year Competition 2018 on Wednesday!

The judges comments spoke of his effort and dedication:

"He cooked two exceptional dishes today. From the start of the competition to the finish his work method and his skill, and what he turned out on plates was very very good for a lad of his age."

Jack is one of our team of chefs at Dylan’s Llandudno, and brought two of his wonderful dishes to the table at the competition:

To start, Plaice Paupiette, Sun blushed Tomato, Buttered Leeks, Fried Oyster, Sauce Choron, followed by Pan Seared Fillet of Seabass, Pen Llyn Crab Polenta, Menai Mussels, Crisp Shallots, Mariniere Sauce


In the run up to the event, Jack had been working hard with support from Group Head Chef Andy, and our new development chef, Chris Owen, in preparation for the competition, alongside continuing his studies for an NVQ Level 2 in Professional Cookery, with Llandrillo College.
