The Team

Team Dylan's really is one team. Across all our restaurants, kitchens & shops, we think of ourselves as one family, all working together to support each other through daily service.

Below are some faces & names that you'll know well, but there may well be some that are new to you too!

David Evans - Director

David is a father of five - his youngest son Dylan lives on Anglesey and the others are in Manchester, London & beyond.

In 2011 he started work on Dylan’s. His wife Jane works alongside him in the business, and you will see her fantastic artwork in and around the four restaurants in Criccieth, Menai Bridge, Conwy & Llandudno.

David loves working with his team at Dylan’s. He is passionate about food, feeding people, & making people feel welcome in our restaurants.

Robin Hodgson - Director

Robin lives on Anglesey with his wife, Mairaed, & their two children on Anglesey.

Lifelong friends, Robin embarked on the Dylan's adventure together with David, way back in 2011, opening Dylan's Menai Bridge in 2012.

An avid Beekeeper, Gardener & connoisseur of all things beverage, Robin is a familiar face at the door of all our restaurants, Wales' very own Fred Sirieix level matradee!

Andy Foster - Managing Director

Andy has been helping lead the company through the largest changes & challenges it's faced since opening in 2012.

He lives with his family, partner Erin & two children, in Conwy, just a few minutes away from our Llandudno restaurant.

With over 25 years in the restaurant industry, a wealth of knowledge & experience lies behind one of his most well known phrases; 'I'm just a cook'.

Michael Cheetham - Executive Head Chef

Mike fills the role of Executive Chef at Dylan’s. He formally cheffed at Bodysgallen Hall (3 rosettes, 4 stars). He then transitioned into self-employment, setting up & running his own recruitment agency & worked as a chef-for-hire.

He has a wealth of culinary experience, has a keen eye for menu development, & is an excellent figurehead for the kitchen team at Dylan’s.

Elaine Wells - HR Manager

Elaine has been a People Manager for over 20 years in both retail & hospitality. She is passionate about developing people to reach their full potential - the best part of Elaine's role is helping people to grow their careers and achieve their goals.

Lucy Barbour-Hill - Graphic Designer

Lucy lives on in LlanfairPG & is never happier than when out running along the beautiful coastline of Anglesey or spending a day on our fantastic local beaches with her family.

Constantly inspired by North Wales, & the wonderful scenery from the sea to the mountains, she is always glad to be able to bring this aspect into her work with Dylan’s, reusing & recycling to create wild and wonderful creations to adorn the restaurants & stores!

David Retallick - Marketing, Media & Community Relations Manager

Between four restaurants, a shop, bakery & production & a prep kitchen, alongside a thriving wholesale business, a lot of information flies around every day.

He lives in Menai Bridge, a stones-throw from the original Dylan's restaurant, where he worked on the bar for 3 years before moving to Head Office.

Lisa Reynolds - Digital Marketing & Communications Manager

Between four restaurants, a shop, bakery & production & a prep kitchen, alongside a thriving wholesale business, a lot of exciting information flies around every day.

Lisa makes sure to update customers & Team Dylan's on a daily basis, keeping everyone in the know with news & events on social media, newsletters & everything in between!

Pip Taylor - Finance

Pip, a chartered accountant, ACA, has 24 years in finance, & now manages our accounting team as Finance Manager at Dylan’s, setting our forecasts & targets for all our sites, across Anglesey, Gwynedd & Conwy - no small task! She is also a parent governor of Ysgol Rhoscolyn.

Nathanial Anderson - Junior Operations Manager

Nathanial is Junior Operations Manager at Dylan’s & formally worked at Greenwood Forest Park, where he fulfilled the role of Activities Manager. He is one of the newest members of our senior team, & has responsibility for site maintenance, wet stocks & retail management.

Lisa Mayes - General Stores Manager

Lisa has seen the founding & development of our General Stores since they were first established as a weekend market during the pandemic in 2020. Having a decade background in hospitality herself, there is no one who knows our bakery & retail range as well as her, as she manages hundreds of lines from over 50 Welsh producers, & the team across the Conwy & Menai Bridge stores.
